Most of my stuff I access through FireFox, so I guess FireFox would be my defacto most favourite piece of software. But if I can count webware, then I'd also include:
Gregarius - For collecting all my RSS feeds.
Bamboo Invoice - Easy to use invoice system for work.
MPD/Pitchfork or Winamp/BrowseAmp - To play and remotely control my music.

More traditional software:
LogMeIn - To remotely control my home pc from my netbook or work.
VMWare - For running and testing various PCs from one server.

I must agree with Hooch of Firefox. Besides the software's that I'm forced to open everyday like email clients, It would be automatic for me to open Firefox to do my rounds of regular browsing.

I'd like to add in Mind Manager Pro (www.mindjet.com) and File Maker Pro Advanced (www.filemaker.com) as a close second. Both gives me the flexibility to do what I want and I how want things to be in my computer.
